I got a letter saying i was approved for the American express gold card with rewards but someone told me that with American express you have to pay the whole balance off at once every month is this true
It depends on what kind of American Express card you have. I have the Blue Cash card and I can pay the balance over time. But I think the Gold Card works like the regular American Express card where you have to pay the balance in full.
That is usually the case. It is a charge card-not a credit card.
American Express has diversified it's offering of financial products to include hybrid charge cards which allow you to carry a balance and true credit cards. But the traditional Gold Card is still a charge card only- charge purchases and pay them off when the bill comes in.
It depends on the Amex card you get. In the case of AMEX Gold card... yes and no. Initially yes you do have to pay your balances off in full at the end of each month. After they trust you with making payments on time they extend the flex pay feature to you... which they let you carry a balance on any purchase over $200 dollars... (i.e. you charge $40 of gas, you have to pay this off at the end of the month in full, now lets say you go to home depot and buy a fridge for $600 this purchase would qualify for the flex pay which you can make monthly payments on) You will notice on your bill they will have a break down on the items that need to be paid in full and the items that qualified for flex pay. I love it this card is awesome.
I have the green card and I'm allowed to "pay over time". I paid off my balance each month for many years before they came up with this option. Each card may be different. The information should be included with your invitation. Or you can call:

With the gold card yes, the Blue card is a revolving credit card, the green, gold, platinum are charge cards paid off at the end of the month...
There are other 'credit revolving cards' they offer such as Delta Skymiles Platinum and a few others....

I only ever paid the minimum balance on my American Express Blue card. I was not charged any fees for doing so.
