Apparantly I have 3 "resin surf posterior" cavities?
I never had any cavities in 18 years and now this. Haha. But anyway, how serious is that? Will I need anesthesia, and how do I get fillings that don't have mercury in them?

Ok - it sounds like you heard the dentist say 3 "surface resin posterior" fillings, meaning:
3 surfaces are involved - could all be on 1 tooth, or 2 or 3 different teeth
posterior - they are back teeth
resin - the dentist is planning to use the white (tooth-colored) fillings that do not contain mercury. The fillings that contain mercury are called amalgam fillings.
Anesthesia - ? Personally, I would never get a filling without a local anesthetic. But a some people do. You feel a pinch for a minute, then you get numb, and don't feel any drilling pain, just the vibrations. You stay numb for a few hours - longer on the bottom than on the top. You could always ask if you can try it without novocaine, and if you change your mind because of discomfort, the dentist can numb you up.
You'll be fine. Make these your last cavities! : )

What she said. ^ I also want to strongly recommend anesthesia. It's a quite uncomfortable procedure.
