I'm planning to go to vegas in march and i've never really been to a fancy restaurant before in vegas so i just want to hear your opinions on what places you like to eat. My boyfriend isn't into seafood so no seafood restaurants. Also, we want to eat somewhere on the strip and inside the hotels. If you know the price range of the restaurant then please let me know. thanks! =)

If price is really no object, you can dine at the following:
Joel Robuchon at the MGM Grand
Alex at the Wynn
Picasso at Bellagio
Guy Savoy at Caesar's Palace
All of these hotels are owned by world-class chefs. If you want the best these places have to offer, try a tasting menu with wine pairings. Be warned: this can be *very* expensive. For example, the 7-course tasting menu with wine pairings runs $325 per person (not including tax and tip). Without wine pairings, it's $195. Or you could choose the 3-course fixed price menu for $145.
Or you could go for the 3-course menu at Le Cirque (at Bellagio) for $105 per person (doesn't include wine). The point is, you asked for the best, and the best can be pretty pricey. If you want more choices at a lower price, drop me a line (click the my name) for some other recommendations.
Have a fantastic dinner at Picasso in The Bellagio. The food is amazing! Expensive but amazing! It's really great at night to look out the windows of the restaurant and see the Eiffel tower all lit up across the street at Paris as well as the fountain show that goes every 15 minutes or so.
Take a look at the a-la-carte menu but for full blown experience, do the tasting menu with wine pairings for each course.
(You can expect to pay anywhere from $150 plus per person depending on the menu the chef has put together and the wine that is served. I've seen prices at Joël Robuchon (MGM) for the six course meal at $250 per person, 16 course menu at $385 per!)
Also at Bellagio, make sure to see the chocolate fountain at the Jean-Philippe Patissere right around the corner from the conservatory and botanical garden, and buy something sweet for after dinner! So many places to choose from that's why I love Vegas.
You did say fancy restaurant, so I'm assuming you have no interest in a buffet. You kind of limit yourself by insisting on a place in a strip hotel.
If you must, I suggest staying away from the famous name places, as my experience (and I've eaten in many), is that much of what you pay for is the name rather than the food. Not that they're bad, it's just that you can do better for the price.
On the strip in a hotel, the Steakhouse at Camelot in the Excalibur has been fantastic every time we've been. Outstanding food, and outstanding service. You wouldn't think of it, given it's location, but it ranks as one of our three favorites.
On the strip, but not in a hotel is Alan Albert's and the Rosewood Grill (they share a kitchen). They are located across from the Monte Carlo, down a short driveway. I have only eaten at Alan Albert's, where the physical atmosphere is very luxurious old Vegas, but you can dress in Jeans and joke with the waiters. Best steak I've had in town.
For the best beef with an elegant atmosphere, Hugo's in the Four Queens, downtown.
There may be others, but after living here for four and a half years, those are where we take our out of town guests.
As mentioned in a previous post, it's going to cost you. Figure an easy $300 for two with tips and drinks (assuming you don't go crazy on the wine).

Check out N9NE at the Palms. It's a good steakhouse and is conveniently located in the Palms, which is a really fun place. I also like the steakhouse at Harrah's. Expect to pay around $30-50 for a steak, plus sides and drinks.... you can easily hit $100-$200 for two people.
There's a Maggiano's at Fashion Show Mall which is right on the strip and they have very tasty italian food. It's a little less expensive, and their portion sizes are pretty good so you can share.
Also, check out Grand Lux at the Venetian or Sir Galahad's at the Excalibur; or Gallagher's at New York New York. I've been to all of these and they're pretty tasty, too!
Most of the dinner buffets are going to run you around $30 per person, so if you're going to spend that money anyway, you can definitely have a nice sit down dinner somewhere else.

There are lots of great restaurants there-- many of the top chefs in the US have a place in Vegas-- Wolfgang Puck, Emeril Lagasse, Charlie Palmer, just to name a few. If you want something you won't experience anywhere else, go to the Mandalay Bay and eat at Aureole. The food is amazing, with an atmosphere to match. If you like wine, it is especially cool to see "wine angels" (girls in black leotards suspended from the ceiling in a glassed-in four story wine cellar, ala "Mission Impossible" style) glide up and down to get your bottle. Pricey. About $100 per person (with alcohol). If you like steak, and don't mind paying $50 and up for melt in your mouth prime beef and Kobe, go to the Bellagio and eat at Prime; and, you can watch the Bellagio fountains from your table. Delmonico in the Venetian is also excellent, and a bit less expensive. The atmosphere is not quite as nice though-- there are no windows. The buffets are good, but how romantic can it be to go down a food line with the likes of Randy Quaid ("Vegas Vacation")? Oh, and don't forget my favorite highlight after indulging in all the amazing chef-driven cuisine-- In and Out Burger! If you don't live in Nevada or California you must not leave Vegas without having the best burger in the universe. Double double, extra cheese, hand cut fries, chocolate shake--great remedy for a Vegas hangover!

I want to add one suggestion which is the Eiffel Tower Restaurant in Paris Hotel and Casino. They have excellent French food with perfect wine pairings (just ask the sommelier if you are not familiar with French wines). If you get a reservation, ask for a window seat and get a time slot when the sun has already set. You will have an awesome view of the Bellagio fountain show.
Our absolute favorite place when we were stations there was the Voo Doo Lounge at the Rio. All walls of the resturant are windows, so you have an amazing view from anywhere you sit. It is a fancy place, so that meant we got to dress up (business casual, not formal) & the food was soooooo good! We would go there for any special occasion we could come up with. You can go to the Rio's website & find the Voo Doo Lounge under the resturants link & view their menu to make sure there are things the two of you would like. We would go & spend around $80-$90 including tip. But the atmosphere & food made it worth it! Good luck in Vegas & have fun!

I live in Vegas and I've eaten in just about all the places and my three favorite places that I go to over and over and over again are:
Trader Vic's at Planet Hollywood. It's new, so not many people know about it, but the food is really good.
Maggiano's at the Fashion Show. Really good, solid, yummy Italian food. You GOTTA get the Nona's Poundcake for desert even if you have to get it to go.
Paris buffet. It's a buffet, but it's like a NICE buffet.
The buffet at the Rio, the Luxor and Excalibur are all good. The Rio does have a lot of sea food (if you like it) but it has other things too. The Buffet at the Mandalay Bay is very pricey.
For breakfast, check out a nice little place on Fremont street next to the Las Vegas Club.
Emeril's New Orleans Fish House in the MGM has really good food. It's a nice place and a reservation is probably a good idea.
