Eevee can't evolve into Umbreon, Espeon, or Glaceon in Yellow because those forms of Eevee didn't exist in the first generation of pokemon (which consists of Red/Blue/Yellow). Umbreon and Espeon were introduced in Generation 2 (Gold/Silver/Crystal). Glaceon was introduced in Generation 4 (Diamond/Pearl/Platinum).
So Eevee can't be Umbreon, Espeon, or Glaceon on your Yellow. Sorry.
The only eeveelutions in yellow/red/blue are Flareon, Vaporeon, and Jolteon since they were from the first generation. Umbreon and Espeon came in generation 2, in Gold/Silver/Crystal, and Glaceon and Leafeon came in 4 gen.
