It's the title for the paper I am writing...
I tend to get a little confused about what I should capitalize, and what I shouldn't. Here's the sentence:
"If a Protester Assaulted an Officer he would get seven years in prison.”

the only thing that should be capitilised is Officer, as the Officer is the authority :)
If a title, all (most) first letters are capitalized.
(Your sentence is not indicative of a title, rather a full statement).
Consider the following as a title (not as a headline):
Protester Assaults Officer, Seven Years Enough?
or...
Seven Year Sentence for Assaulting Police Officer.
Seven Year Sentence to Protester for Assaulting Police Officer.
Assaulting a cop, seven years in prison. (Headline).
etc.
Notice the capitalization of the letters.
As a headline, your choices are less strict.
As a title, draw the reader's attention.

It should just be
If a protester assaulted an officer he would get seven years in prison.
You only capitalize stuff like

And stuff like that in the middle of a sentence

First off, this should not be a title. It is too specific for your paper. My English professor told me that it should be a phrase rather than a sentence. My recommended title for your paper based only from your title would be " An Assault to an Officer", "Consequences of Brutality", or "Protesters Gone Wild". I'm only joking with the last one. In conclusion, shorten your title.
