Perhaps you could pick a character from the Prologue that doesn't have a tale in the book, draw a representation of the character, and then write a short, imaginative tale for him/her. If it's supposed to remain primarily visual, I say that puppets for some reason are always teacher-pleasers. Make a puppet, and then have it recite something from its tale- in Middle English would get you brownie points! :)
When I read that in high school we were told to draw the body of one of the characters and put details on it of things that were related to them. Then, we were supposed to thing of a famous person that reminded us of the character, print out a picture of their head (bigger than the body) and put the head on the body. Then we just had to tell why we picked that famous person and explain why we drew the things we drew on the body.
I think the friar is a good choice. He has the longest description in the prologue of the CT. Do something related to how corrupt and hypocritical he was.
