So the thing is I don't want to sit behind a desk for my military career. I know combat arms you have a pretty good probability of going outside the wire (if your deployed that is), but I'm also thinking about MI, or would I just be sitting at a desk?

I went to the MEPS with no idea what I wanted to do, so when I had to make a choice, I was more or less pushed into becoming an aircraft electrician. I asked for permission to call my recruiter and talk it over with him. He recommended that I take it, so I did, and I thought it worked out just fine.
The only thing I didn't like about it was that the AIT was so frickin' long--about 7 months. But once I got to my permanent duty station, it was OK.
Every MOS will eventually get you behind a desk. Once you reach E-6/E-7 and become platoon sergeant, a lot of it is desk time, taking care of admin issues for the Soldiers and planning out training.
Before you start daydreaming of having a career that involves excitement and adventure and everything you like in Call of Duty realize that doing more than one or two(maybe) enlistments these days isn't likely unless you have an in demand/ high skill job and most of those are in some form a "desk" job. Plus, eventually you would get desked as field work is for the young boys.
