I had to make something for dinner and I threw some water, chicken, and seasonings into a soup pot to boil. Once it is cooked through, I am cutting it up and making a creamy, cheesy broth-because it is freezing cold outside, and I haven't had anything to eat but gum and two cookies since 9 a.m.
Update:M'kay-I threw in about 6 boneless skinless chicken breasts, with (all of the following are estimates) 1 tbsp salt, 1 tsp chilli powder, 3/4 tsp smoked paprika, 1 tbsp garlic powder, 1 tbsp onion powder, 1/2 tsp fennel seed, 1/4 tsp ground black pepper...also 1/8 cup of chopped fresh/frozen cilantro, and the same amount of fresh/frozen sweet basil. I will be adding a can of diced tomatoes(drained, of course), then a bunch of shredded cheddar, and whole milk and skim milk. That, in and of itself, should help it thicken. I suppose one could add a can of drained and rinsed black or pinto beans as well.

I would totally eat that, thanks for posting the recipie. Did you use regular diced tomatoes or rotel tomatoes? I'd be tempted to add a little bit of kielbasa for flavor but then again I smoke a lot of pot.
I've had Chicken Tortilla Soup, and this sounds similar, although with a cheesy broth. Sounds yummy, especially on a cold day.
I usually cook boneless skinless chicken breast in George Forman grill in not on the outside grill. Then I slice up lots of sweet yellow and bell pepper and stir fry in a healthy oil and add sliced cooked chicken and then serve in small flour tortillas with pico digiao and avocado and sour cream. Yum,
Not really, because the parentheses around "chicken quesadilla soup" make it sound as though it's not chicken quesadilla soup at all, but bathwater with bits of loofah, or perhaps the water left in your sink dishes.
However, your recipe sounds delicious.
