Cells A1-E1 have either value TEXT1 or TEXT2
IF cells A1-E1 contain or entered TEXT1 it will return to = blank
IF Cells in A1-E1 contain or entered TEXT1 and TEXT2 it will return to = Current date then it will lock and will never auto update to current date.
Notes:
Only TEXT2 will return to date and lock it.
If the value of the cells A1-E1 is TEXT1 it will return to blank.

CTRL semicolon is the way to put in the current date without it updating. This won't work if you input on multiple days--when you hit the button, it puts text for the current date in the cell.
What you would need is a macro (or to just do this as a last step before closing), that copies the cells and paste-special the values in their place. That way the DATE function would put in an update-able date, and then you would paste the value/date in place of the date function so that it won't update again..
