My trainer runs a horse camp in the summer and as her head camp counselor and assistant in general, I am helping her brainstorm activities we can do. The ages are mid-elementary school through middle school (8-13 year olds), so far all campers have been girls. We have a HUGE outdoor arena, decent sized indoor arena, three dry pastures and a large grassy yard at our disposal (along with the barn its-self).
To keep camp cost down, it would be great for them to be cheap or free, with minimal gas/travel involved. So far we have:
Farrier Demo
Vet (shots, temperature, etc, basics) Demo
Worming Demo
Basic Anatomy
Grooming and Tacking up/down
Riding time (duh, but I figured I should add it)
Chores
Tack Education (Labeling games)
Bathing the Horses (if it's warm enough)
What else should we add to the list? Think of any fun games you did in your horse camp days, or if you have little games around the barn (or on a horse) that you play.

Well at the summer camp I volunteer at (also young kids), here's what we do- (some stuff you already have on your list)-
Basic Anatomy
Grooming and Tack Education
Clean saddles
Riding time
Chores
Bathing the horses
That's just some of the "learning" stuff we do. Here are some of the fun activities-
On horseback-
Red light/green light
Musical chairs (Well not really, but we all walk around the arena while music is playing, then when it stops, whoever dismounts the last is out. We eventually end up with everyone loping).
Around the world (Spin around in saddle)
Bareback
Barrels/Poles/Flags
That's all I can think of for that...
Then for the non horse activities we just do arts and crafts at the end of the day, then go swimming(:

My son's at a spring break camp this week. On Monday, they had a scavenger hunt - they broke up into teams to find certain items related to horses (girth, splint boot, hoof pick, etc). Today they had a talk about different horse sports, both English and western (although they missed several). They've also done non-horse things like kickball and tag. They're also having the highest level riders (which my son is) help with the lessons for the beginners who need someone walking beside them.
You can also paint a pony - let them put hand prints and designs on one with non-toxic washable paint. Any kind of obstacle course is always fun. You could have some arts & crafts projects. Your list sounds good but remember the age of your campers and make sure you find a way to make learning those things fun!

Braiding the mane and tail - can be done outdoors or under cover, depending on the weather.
Identifying different feeds and discuss the effects that they have on a horse.
Basic rules of feeding - ie horse is individual and therefore one size meal does not fit all, feeding regularly on time, no riding for two hours after a feed etc.
Basic blanket fitting and measuring and uses.
Fitting fly sheets and masks.
Indentifying poisonous plants and how to deal with them.
Different careers with horses - and then quiz them after the lecture. Ie role of a saddler, vet nurse, vet, feed merchant, dentist etc. You would not believe some of the answers - I did a question once, "A farrier deals with the horse's teeth and mouth? True or false! You can tell if a kid has been listening or not, I got more than one "True" answer!
Pasture management including poo picking, rotation and checking for dangerous objects - when the horses are indoors or tied on lines you could go out and place various hazzards around the pastures for the kids to look out for - but be sure to pick them up afterwards before turning horses out! Pasture management could also include water, fencing checks and founder!
Treasure hunts in the paddocks - strict rules of walking only, and some instructors should be on horse back, and some on foot to deal with any emergencies.
And riding and road safety! I believe that no rider should ever own a horse or ride on the roads until they have been thoroughly briefed on how to ride on the roads, deal with spooks and different types of traffic and thoroughly know the rules of the roads regarding horses - including leading - etc and have been tested on this. This would include visibility aids such as hi viz jackets, hi viz leg wraps, blankets etc. This would cause a reduction of death and accidents on the roads and make life generally easier.
Just a few ideas off the top of my head. All these things can be made to be fun with a bit of imagination.
I went to horse camp a long long time ago, but I remember having races to see which group could saddle up their horse correctly and quickly. We also made a toy, out of old detergent bottles. They would hang, from a string, in the middle of each horse's big stall and the horse could play with it.

Egg and Spoon races
Trail Riding
Trotting races
Target Shooting with squirt guns(riders ride up to a target and try to shoot the bull's eye with a squirt gun)
Relay Races

We used to do a kids camp at one of the guest ranches i worked on and one of the things that was really popular was to let them paint their horses with washable paint. Some of the kids came up with some really neat ideas and it gets pretty creative. Painting and decorating horse shoes would be another suggestion. Maybe making posters of their favorite horse.
