So, tonight I want to step up and make a nice family dinner so than when my mom comes off work she doesn't have to plan anything. The con is to this is, I'm a vegetarian and the rest of my family are meat eaters.. its hard to find recipes in which we all can have it. It honestly stinks having them eat one dinner and me eat another, I want it so we all can have one meal together and not two separate ones.. does anyone know any meals that we all can enjoy without meat? I was thinking of spaghetti but I'm not sure!

Family meals can be tricky when you have vegetarians and meat-eaters in the mix. You want to try and make everyone happy without compromising your own veggie goals. When you live with meat-eaters they sometimes complain about veggie meals. By making meals they like as much as meat you cut back on complaints (it’s win-win). Veggie pot pie – add tofu for more substance.
Good old pasta and sauce (marinara or Alfredo) sans meatballs (add a salad and some homemade organic french bread).
Veggie, cheese, or vegetarian Mexican taco pizza.
Black Bean Chilaquile – one of my FAVORITE veg recipes ever AND bonus, every meat eater I’ve ever made this for loves it. This recipe, by the way is originally from Moosewood Restaurant Low-Fat Favorites: Flavorful Recipes for Healthful Meals.
Basic Spanish rice and bean burritos. Add sauteed bell peppers, tomatoes and onions for more flavor. Lentil tacos are also great.
Set up a baked potato bar. Cook a bunch of potatoes, then lay out toppings like veggies, cheese, salsa or chili – Amy’s has a good vegetarian organic chili, but even the medium is pretty spicy IMO, so I’d go with mild if you’re not down with spice.
Hearty and delicious vegan brunch.
Vegan enchiladas – good for kids.
A summer meal even a meat-and-potatoes individual will love – pulled “pork” BBQ sandwiches, coleslaw, sweet potato fries and a cherry pie for dessert.
Vegan white bean burgers or black bean burgers OR my favorite mild black bean burgers (just a little kick, good for kids).
Try an easy super low-cost organic breakfast with eggs, hearty potatoes and toast. Just make sure to go bacon-free.
Make a huge stir fry minus the meat – pack in lots of veggies, marinated tofu if you like and have rice and fruit on the side.
California grilled veggie sandwich.

What you could do is simply add meat at the very end of cooking and take a portion for yourself before adding it, or serve the meat part on the side.
For example you could make spaghetti with meatballs, but have the meatballs served alongside it for people to put on their plates rather than serving it in the sauce. You could also make the sauce with your favorite veggies (sliced bell pepper, sautéed mushrooms, broccoli florets, and so on).
Veggie soups- hearty, yummy and satisfying! For example tomato soup, spicy carrot soup, butternut squash, etc. Serve with grilled cheese sandwiches, cornbread, biscuits, crackers, or without anything.
Set up a buffet-style meal. For example taco salad: tortilla chips, refried beans, black beans, ground beef with taco seasoning, shredded lettuce, olives, sour cream, salsa, and so on. Or the same with burritos/tacos.

Vegitarian Lasgana (they wont even miss the meat but if they have to have it, grill up some chicken breasts, slice and serve on top of the lasagna)
Various other pasta dishes with tomatoes, olives, artichokes, onions, capers, feta cheese etc... for the meat eaters add chicken or sausage.
how about some cooked dried beans, rice, and salad? of course you could add in ham, chicken wings, or whatever the family likes, just to make them happy, but you don't have to.
I usually make a meat dish and several different vegetable dishes with fruit for dessert. Now why can't you just skip the meat dish and eat the rest?
I had some Catholics here one year during lent. I didn't make a main dish they could eat so they just ate the vegetables, salad and dessert! I had roast beef as my main dish.
this is a good recipe my mother used to cook, it was called Dots stuffed pepper, you will get 4 Big large green peppers, Ground meat, 1 box of velveeta mac and cheese, or Mac and velveeta cheese, bread crumbs, and tomatos, First, Cut crown off of the peppers, shake out the seeds, and arrange them in a baking dish standing up, Now, Brown 1 pound of ground meat, drain the oil fat, and put back into pan, put your macaroni in the beef, and stir, Now, take spoonfulls of mac and beef mixture and place inside each green pepper, Now stuff with cheese, until you reach the top, top with breadcrumbs, and then keep repating same thing to each pepper, in and around the green peppers place slices of tomatoes around the peppers, and , then place in an 400 degree oven, and bake for 30 minutes
You can do spaghetti with meatballs on the side just for them, plus a salad and garlic bread. Or a veterinarian lasagna. I eat meat but I love roasted vegetable lasagna.
The previous answers are good. I would say pasta as well because there are alot of delicious no meat pasta dishes that everyone would love.
