my favorite vegetarian dish is eggplant parmesan - it's so good!! i don't have a specific recipe, i just did a google search for how to bread & fry eggplant slices, & then all you have to do is layer eggplant, sauce, & lots of cheese in a dish & bake for like 20 minutes. serve over noodles with garlic bread & salad for an awesome meal! i also love fettuccine alfredo with mushrooms, spinach, or broccoli - i like the "quick and easy alfredo" sauce from allrecipes.com. hope this helps!
