ok so i want to impress my family cooking something good and my grandma has diebities (i dont know how to spell it) so something heathy too please i would like a mexican or chinnese recipe or any good and easy recipes iam not a good cook..!! including desserts thank you so much

- 1 bag frozen strawberries/1 box fresh strawberries
- 1/2 cup orange juice
- 1/2 cup honey
- 2 tbsp cream/whole milk
- 4 tbsp sugar
put all ingredients in a bowl & use an immersion blender OR put in food processor or blender. Blend/puree until creamy & smooth. put in container. put in fridge until ready to serve.
lemon rice:
- 4 cups rice
- 3 cups water
- 1/2 cup oil
- 1/2 cup lemon juice
- 1 tbsp lemon zest
boil water. add lemon juice & oil. add rice. cover & let cook. fluff with fork & recover to let simmer. add lemon zest for garnish.

Chinese Chicken Spicy Rice
INGREDIENTS :
1) Chicken 1/2 Kg
2) RIce 1/2 Kg
3) Cabbage 1 Small
4) Carrot 1
5) Peas 1/2 cup
6) Spring onion 1
7) Green chillies 3-4
8) Eggs 2
9) Salt 1 Tbsp
10) Chinese Salt 1 Tbsp
11) Black Pepper 1 Tbsp
12) Whole SpIce Ground 1 Tbsp
13) Soya Sauce 3 Tbsp
14) Yellow food colour 1 pinch
15) Oil 1/2 cup
How To Cook Chinese Chicken Spicy Rice :
1-Boil chicken with pinch of salt and remove from bones.
2-In a non sticking pan take 2 Tbsp of oil and fry cabbage and carrot untill cooked. dont overcook. now put boiled peas and spring onion. Stir for few minutes and set a side.
3- Now heat 1/2 cup oil in(preferably) non sticking pan. Add 2 baten eggs and mix vigorously. Now add food color.
4-Put chicken in it and stir for some time then put cooked vegetables.
5- Add green chillies and all spices from salt to soya sauce. Mix well.
6-Now put boiled rice stir and shake well by covering and holding the pan from sides so that all things mix well.
7- Serve hot.
for grandma just cook almost anything but don't necessarily make it healthy!! I have diabetes also and must count the grams of carbohydrate in foods.
Green Enchilada Casserole
this goes into a 9 x 13 baking dish!! serves my sister and me or about 8 people if you insist.
3 cans cream of mushroom, undiluted
8 to 12 ounces chopped long green chile, any heat you wish mild, medium or our favorite HOT
1 large onion minced
3 cans chopped tomatoes, with juice
stir all the above together with whisk til it is smooth
brown 2 pounds extra lean ground beef with
1 teaspoon oregano
1 teaspoon salt
2 pounds shredded cojack or sharp cheddar cheese
18 corn tortillas
put 6 tortillas in bottom of baking dish that has been lined with aluminum foil that extends above the dish, then misted with oil
put 1/3 of soup mix on this
1/3 of meat on the soup
1/3 of the cheese
then start with the tortillas again. You can press out air when adding the tortilla layers!!
Bake at 350 for one hour!!
Serve with garden salad, guacamole and sour cream
about 1/12 serving is 30 grams of carb.

--can of chicken broth

--spaghetti
Directions:
1. Pound chicken breasts flat. If you place them between waxed paper or plastic wrap, it helps make for easier clean up. Season breasts with salt and pepper and dredge in flour.
2. Heat oil in skillet. Brown breasts on both sides. It won't take long. Add garlic, onions, chicken broth, and top chicken pieces with a slice of lemon.
3. Cover pan with lid, turn to "low" and allow it to simmer. The onion, garlic, and chicken broth will combine with the flour on the chicken and make a nice sauce. It won't take long, perhaps 15 minutes or so. Don't let it cook much longer and don't allow it to get too dry.
Serve with cooked spaghetti and a vegetable. A whole wheat pasta will be better for your grandmother.

1 pound of sweet Italian sausage
1 pound of ground beef
1/2 cup of chopped onions

1 (28 ounce) can of crushed tomatoes
2 (8 ounce) cans of tomato sauce
2 (6 ounce) cans of tomato paste
1/2 Cup of Water
2 tablespoons white sugar
1 teaspoon fennel seed
2 teaspoons fresh Basil leaves chopped
4 tablespoons fresh Italian parsley chopped
1 teaspoon salt
1 teaspoon Italian Seasoning
1/2 teaspoon ground pepper
23 ounces of ricotta cheese.
1/2 teaspoon fresh grated nutmeg
1 egg
1 pound shredded mozzarella cheese
1 cup grated Parmesan cheese
12 Lasagna Noodles
Directions
1. Start with the following in a pot.
1 pound of sweet Italian sausage
1 pound of ground beef
1/2 cup of chopped onions
2 cloves of garlic chopped
Brown the ground beef, Italian sausage, onions and garlic in a pot until they start to look. It takes about 6 to 9 minutes to brown the meat. I like to use a Dutch oven to cook this portion of the recipe. I use a medium low temperature to brown the meat. It is optional to remove the grease from the meat once it is finished browning, your choice.
2. Add the following:
1 (28 ounce) can of crushed tomatoes
2 (8 ounce) cans of tomato sauce
2 (6 ounce) cans of tomato paste
1/2 cup of water
Gently stir this into the cooking meat.
3. Add the following:
2 tablespoons white sugar
1 teaspoon fennel seed
2 teaspoons fresh Basil leaves chopped
2 tablespoons fresh Italian parsley chopped
1 teaspoon salt
1 teaspoon Italian Seasoning
1/2 teaspoon ground pepper
Gently stir these seasoning into the sauce.
Cover the pot and let the meat sauce simmer. Simmer on low heat for 1 hour and 30 minutes
4. Soak 12 lasagna noodles.
The lasagna noodles need to be soaked in hot tap water for 15 minutes.
5. While the noodles are soaking you can make the cheese filling.
Put the following in a mixing bowl:
23 ounces of ricotta cheese.
1/2 teaspoon fresh grated nutmeg
Grate fresh nutmeg over the Ricotta cheese.
6. Add the following
1 egg
2 tablespoons fresh Italian parsley chopped
Mix these ingredients together with a spoon
7. Now we start building the lasagna layers.
Use a 9×13 inch baking pan.
Spread 2 Cups of meat sauce on the bottom of the pan.
Remove your lasagna noodles out of the water bath. Shake water off wet noodles.
Lay 6 noodles across the layer of sauce.
Spread half of the ricotta cheese mixture over the layer of noodles.
Spread 1/2 of the mozzarella cheese over the ricotta layer.
Sprinkle half of the Parmesan cheese over the mozzarella layer
Spread 2 cups of meat sauce over the cheese layer
Lay down the next layer of noodles
Spread the remaining ricotta mixture over noodles
Spread the mozzarella and Parmesan cheeses saving some cheese for the top of the lasagna
Put the last layer of meat sauce on the cheeses
Sprinkle the remaining cheese on top.
8. Cover with foil
Bake in preheated oven at 350 for 25 minutes
Remove foil and bake uncovered for another 25 minutes.
Remove from oven and allow to cool for approximately 15 minutes.
