Complete honesty here: I'm not big on veggies. I've always been pretty small and never had to diet or anything which I used as a big excuse not to eat right but I'm trying to change that. Until a few months ago I rarely ate any veggies and now that I do they're usually canned vegetables which I've heard aren't very good for you anyway.
However, when I try to make frozen veggies like corn or green beans they always come out rubbery and gross! what do I do?

Here's what you need to understand about frozen veggies, they've already been partially cooked and then frozen.
If you cook them for a long time (regardless of how - steam, microwave, boil, etc), they will become very overcooked and they're texture will suck. Which ever advice you follow above - it's all great. Just make sure you're cooking the frozen veg with a watchful eye, and very briefly. Think of it as you're warming the frozen veg, rather than cooking it. Hope this helps! k.
1)Boil half a cup of water for every pint of vegetable to be cooked in a saucepan; larger vegetables, such as corn on the cob, may require more water. Add salt to the water, if desired.
2)Add the frozen vegetables when the water is at a rolling boil. The vegetables will cool the water and it may stop boiling; if that happens, bring the water back to a boil.
3)Separate vegetables stuck together with a fork. If the vegetables stay stuck together while cooking, they won't fully cook. Ensure even cooking by gradually freeing frozen pieces from one other.
4)Cover the saucepan to help steam the vegetables. This will make the vegetables more crisp and hold in more of the vitamins. Cook until desired consistency; times will vary depending on the type and quantity of vegetable being cooked.
5)Drain the water. Once cooked, the vegetables should not remain in water. Keeping them in water will make them soggy. Add salt, pepper or other seasonings to create the flavor you like.
Measure out the amount of frozen vegetables you want per serving is the best way. I have some small plastic containers that are exactly the right size for me and I have them sitting near the oven ready to cook
With practice you will know how much water you will need to have in the pot to barely cover them, 'bring the water to the boil first'. Place in the frozen vegetables and let them come up to the boil again and set the timer for 5 minutes only.
Reduce the heat and let them simmer and after 5 minutes use a fork to get something out and test to see how well they are cooked and if they need salt.
Let them cook longer if you want them softer, but most vegetables can be cooked within 10 minutes done that way

Frozen veggies are already cooked before they are flash frozen, so you only need to heat them up. You can steam them for about 5 min in a double boiler on the stove or put into a microwave dish and steam in the microwave for 3-5 min, depending on how many are in the container.
You can check partway through - stir them to ensure that they are all thawing properly.
Put one cup of water into a sauce pan, bring it to a boil, add the veggies, then read the bag to see how long to cook them.
Or you could microwave them for a few minutes.
Canned vegetables are NOT bad for you.
You just have to read the directions on the package, it will tell you everything you need to know...
I think you're over cooking your veggies. Vegetables usually don't need to cook too long except for collard greens.
Recently, I stumbled on Swanson's Flavor Booster Concentrated Chicken Broth and I have started using it with most of my veggies and stir-frys. It is delicious !! It comes in a small box with 4 pouches of broth per box. Sells for about $1.78. Each pouch makes 1 cup of broth. If I have left over broth, I freeze it in an Ice Cube Tray. When frozen, transfer it to a freezer bag. 2 cubes of frozen broth equals an ounce of broth.
If you like grits, try a cup of broth in your grits. Delicious.
I don't ever buy canned veggies or fruit I always get fresh or frozen you can boiled in water or depending what kind of veggie like green beans I like to roast them in the oven or in summer grill them I love veggies and I push them very hard in my house there's a veggie with everything or in ssomething I make u can even sneak them in meals like my spaghetti when I cook up the neat I cook it with onions n green peppers n it's soo good maybe add a Lil more butter and if u like pepper or salt n they would t seem so rubbery make sure ur cooking them for the correct time
I do NOT put water in the bowl when microwave steaming the veggies, especially corn.
put it in a bowl, cover tightly with cling wrap, jab a vent hole in the wrap. High for about 3 minutes. Sprinkle with salt or herbs and a little butter and stir.
Canned and frozen veggies are just as nutritious and good for us as fresh is, maybe even better because we don't have to use them immediately when we get them home!! Fresh fruits and veggies spoil too fast and definitely loose their peak of perfection too fast.
I just throw them into a bowl, add some water (I never measure anything), and put them in the microwave until they're hot. I then drain them, and I'm all set.
Steam them ad addsome cream cheese perhaps when theyre done?
