One way is to add about 1 to 1-1/2 teaspoons of vanilla or other flavourings that would be suitable for pancakes. Try using buttermilk.
Our basic pancake recipe is as follows:
1 cup of flour
2 eggs (try beating the whites separately till they peak and then fold them into the batter after blending everything else, including the yokes).
2 T. butter
2 t. baking powder
1/2 t salt
1 cup warm milk
We also have put in chopped up fruit after the batter is blended like apples and added cinnamon (and sometimes a little brown sugar) to the dry ingredients before adding any liquid. We serve with yogurt or jam or peanut butter (whole wheat pancakes, Adam's nat. p'butter and real maple syrup. Sometimes it just doesn't get better than that. Add a nice hot mug of hot coffee or tea and maybe some hashbrowns and/or sausage/bacon with a glass of fruit juice and that's a great breakfast.

1 cup self-raising flour
1 tablespoon sugar

# Mix all the ingredients together.
# Preheat a frying pan on the stove, use medium heat.
# Pour batter into frying pan making approximately 4 inch diameter circles.
# Check the underside of the pancakes to see how well done they are.
# Flip the pancakes over when they're golden brown on the underside. Too brown and they're a bit overcooked.
# They should be done when both sides are golden brown.

Here is my favorite recipe:
1 1/4 cups all-purpose flour
1 egg
1/4 cup granulated sugar
1 teaspoon baking powder -- (heaping)
1 teaspoon baking soda
1/4 cup cooking oil
1. Preheat a skillet over medium heat.
Use a pan with a nonstick surface or apply a little nonstick spray.
2. In a blender or with a mixer, combine all of the remaining ingredients until smooth.
3. Pour the batter by spoonfuls into the hot pan, forming 5-inch circles.
4. When the edges appear to harden, flip the pancakes. They should be light brown.
5. Cook on the other side for same amount of time, until light brown.

Use any pancake mix or recipe, add a little vanilla,about a teaspoon, a little cinnamon, chocolate chips, or fruit. Or any combination of these items.

if the mixture is a little runny and flour for the thickness you prefer if its slightly thick it makes better pancakes and they are easier to turn
