sometimes cranberries are tart so when you boil them with water and lots of sugar by sure and take the foam off the top when cooking. take a spoon and just dip off the foam. this foam will sometimes make them bitter.
like for relish or for simmered fruit for topping ice cream or something?
I put cranberries through the food processor until they are finely chopped, put an orange per 2 cups cranberries through the food processor, then add 4 cups sugar and 1 large package of dry blackberry jello. Stir and refrigerate for 24 hours.
cranberry sauce: put cranberries in kettle with just barely enough water to cover, cook until tender and half the water is gone, add 2 cups sugar to each cup of cranberries.

Sugar.
OH SUUGAR SUGARR (you could try putting them in water with lots of sugar in it. this will take away a little bit of the bitterness)
Try to preserve them in corn syrup in sugar?
Sugar or honey.
