I'd like to prepare half a chicken, skin-on, boiled, then finished for about 7 minutes on a flat top.
I would simmer for about 10 minutes, but the problem will be that some will be just right and other parts would require more cooking.
Any more cooking would only increase the bits that are nearly cooked as the thicker bits continue to cook.
par boil means to partially cook it so cook the chicken until it feels a little firm and there is some pink inside
