In a solubility test, would it be NaHCO3 soluble as a strong acid, or H2SO4 soluble as a neutral compound containing O?
Neutral. There are no acidic protons in a carboxylic anhydride. It can be protonated - that's how acid catalysis of the reactions works.
purely on that id say sulfuric acid as its diprotic whereas Acid anhydride is monoprotic
