I babysit my friend's two boys (2 and 4). I'm a vegetarian; they don't eat any veg except broccoli and potatoes.
What should I cook them for dinner? Anything that the 4 year old could help with would be awesome... but not necessary.
Update:I will be in their house, and no, I'm not gonna feed them what their mother feeds them. She'd deliver them to my door with six cupcakes and a bottle of Coca Cola. Nasty.

A really delicious snack that I love is white bread (French or Italian, maybe ciabatta bread) with some mayonnaise and fresh tomato....I'm telling you, if you haven't tried it, its AMAZING and soooo simple! I bet the kids would love it too (even if they don't eat tomatoes in other cases).
Another snack that I love consists of:
-tortilla (like the one they use in Chipotle for the burritos)
-mayonnaise
-chopped tomatoes (tiny little cubes)
-lettuce (I prefer iceberg)
-cheese (optional)
-salt
-any kind of seasoning u have/like (I use Italian seasoning or Mrs. Dash) (also optional)
So you just put a layer of mayo on the tortilla, put all the other ingredients in, and make a wrap/roll. Then you can cut the tortilla roll into several smaller pieces (about bite size or just a little bigger)....so simple and healthy and sooooo good!
For a really simple and quick dessert you could get strawberries and whipped cream! If you don't have whipped cream u could also use sour cream and sugar. Just mix with any kind of berries (strawberries, blueberries, etc) and its a quick and easy dessert that has always been liked by kids I've babysitted.

beans on toast is a good old stand by with kids but it doesn't have to be boring. Mixing in a selection of (bean-sized for disguise) chopped veg and leftovers serving on crusty bread and cover in toasted cheese can be made quite exciting and is simple enough for the youngster to have a hand in.
Soups with lumps in are very nutritious, child friendly and easy to make whilst yo watch over your charges
Of course you could always make a broccoli and potato oven baked top it off with a sprinkling of grated cheese and cornflakes.

I don't see why you don't ask their mother to bring them the food they eat. Is them eating chicken really going to bother you?
Besides- try mozerella sticks or make them french fries or a baked potato. A veggie burger and baked potatoe.
