There are so many different substitutes for cheese and milk. I buy lactaid milk, and there is soy and rice cheese, soy milk, etc. Instead of cheese use one of these, or milk use lactaid, or soy milk. Don't use rice milk, it is too watery. I had to make an all kosher meal, and I used soy as a substitute for a sauce and it worked out fine and tasted good too.
There are a few dairy free cookbooks out there if you search Amazon you can easily find them. You can sometimes substitute soy milk for cows milk and if you can tolerate Goats milk then use that as a substitute.

Anytime a recipe calls for milk, just use rice or soy milk instead.
