I always have a huge 10 lb. bag of potatoes laying around, but never finish it off quick enough. Besides baked potatoes, mashed potatoes, potato wedges, or potato soup, what are some other creative things that I can create with potatoes as the CENTER of the dish? I'm not looking for potato side-dishes, but potato main courses. Thanks!

How . about shepherds pie?? Potatoes top the casserole.
2 cups cooked chopped meat
1 tablespoon finely chopped onion
2 cups gravy
salt and pepper
2 cups mashed potato, prepared with milk and seasonings as desired
salt and pepper
1/8 teaspoon paprika
1 tablespoon butter
PREPARATION:
Combine meat, gravy, and chopped onion; season with salt and pepper to taste. Line the bottom of a buttered baking dish with a layer of half of the seasoned mashed potatoes. Add meat mixture then cover with remaining mashed potatoes Or, meat and gravy can be put in the baking dish first then topped with all of the mashed potatoes. Dot mashed potato topping with butter, sprinkle with salt, pepper, and paprika, then bake for about 30 minutes at 400°, or until potato topping is browned and the Shepherd's pie is thoroughly heated.
What about scalloped potatoes? Scallop them with ham and cheese, top sliced potatoes with pork chops and sliced onions and cover it with cream of mushroom soup and bake? or cover your meatloaf with mashed potatoes like a cake and frosting, then put under the broiler until the tips get brown and crusty. Very pretty, different and a good use for those potatoes! Those are just a few ideas. Hope it helps.
I do something and eat breakfast lunch or dinner. I sautee 1/4 inch round potato slices in olive oil and put LOTS of spices (like paprika, pepper, garlic, chopped dried parsley, oregano, basil, or just a premixed chicken spice - and my fave salt). You can make them really tender or nice and crispy on the outside. I then mix with scrambled eggs and sometimes salsa.
oooo i just thought of something, i have this jar of pesto that i only use part of to mix with mayonaisse for sandwiches - I will put the pesto in the pan and then coat the potatoes with it. yum.
you can also mimic the egg/potatoe skillets at dennys. they add chopped onions, peppers, cheese. Scrambled eggs are tender and take on the taste of whatever they are mixed with. sort of like tofu.
CORNED BEEF & CABBAGE
Beef Ingredients:
1 (3 to 3 1/2-pound) corned beef brisket
Seasoning Ingredients:
1 cup apple cider or apple juice
2 teaspoons whole black peppercorns
3 bay leaves
Vegetables Ingredients:
10 (about 1 pound) small whole white onions
4 medium potatoes, peeled, cut into quarters
1 medium (4 cups) rutabaga, peeled, cut into 2-inch chunks
1 small head cabbage, cut into 8 wedges
Mustard Sauce Ingredients:
1 cup LAND O LAKES⢠Heavy Whipping Cream
1/2 cup horseradish mustard*
2 tablespoons balsamic vinegar or red wine vinegar
Heat oven to 325°F. Place beef brisket in roaster; add juices and spices from brisket package. Combine all seasoning ingredients in small bowl; pour over brisket. Cover; bake for 2 hours.
Add vegetables. Cover; continue baking for 1 to 1 1/2 hours or until brisket is fork tender and vegetables are desired doneness. Remove brisket and vegetables to serving platter; keep warm.
Beat whipping cream in chilled small bowl at high speed until soft peaks form. Gently stir in horseradish mustard and vinegar by hand. Serve mustard sauce with brisket and vegetables.

Ths is not exactly what ur looking for, but since u have surplus potatoes, slice them paper thin & deep fry with salt. Wafers remain fresh & crispy for a longer period of time if stored properly.
