Hello Everyone. I'm a Mom & work full time. By the time I get home it's 7pm - what are some quick delicious dinner recipes? Please share :) Thanks in advance!
can't really think of any recipes off the top of my head, but if you don't have a crock pot/slow cooker, then invest in one of those & a slow cooker recipe book. You can make beef & chicken & just about anything you can think of. I love it!
Here's a quick one, sorry just thought of my fave!! - chicken breast with teh cheddar cheese soup campbells, with a can of milk, seasonings, put in the slow cooker on LOW all day. The chicken is SO tender. When you get home, then just do a quick instant mashed potato with it & use the cheese sauce as a gravy for the potatoes as well. A salad or veggie, or fruit cup & there you have it. A delicious meal!!
I'm a mom and I work full time too. I have a ton of recipes that I can send to you that make 'double meals'--one to cook and one to freeze for later. I also go to the make ahead meal places--it's not that expensive when you think about it and you can still customize it to your own tastes. When I get home tonight I'll ping you with some (chicken enchiladas, chicken fried rice, tacos, chicken noodle soup, etc). Also, get a crock pot and use it for freezing meat in advance--huge time saver!
1. Preheat oven to 400 degrees F (200 degrees C). Wash chicken breasts, pat dry with paper towels, and cut each breast in half.
2. Heat 2 tablespoons oil in a large skillet over medium-high heat. Sear chicken briefly, turning until no longer pink, about 5 minutes.
3. Meanwhile, in another large skillet, heat 2 tablespoons oil over medium-high heat. Stir in mushrooms, onions, and garlic, if using; cook until they are nice and soft, about 5 minutes.
4. Pour contents of both skillets into a baking dish, sprinkle cheese over the top, and bake about 5 minutes.
This is incredibly easy, and lasts for a few days. Very tasty, this dish doesn't get dry due to the addition of eggs. Give it a shot and you won't be disappointed. Best of luck:)

20minute chicken

* 1/2 large onion, chopped
* 2 (10 ounce) packages sliced fresh button mushrooms
* 1/4 cup olive oil
* salt and freshly ground black pepper to taste
* 1 clove garlic, chopped (optional)
* 1 cup shredded mozzarella cheese
