Directions
Preheat waffle iron according to manufacturer's directions.
In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.
Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.

Plain Griddle Cakes (pancakes from scratch) sift: one cup flour 2 teaspoons baking powder one-quarter teaspoon salt (not needed) beat and add: one egg (optional) add: 1 cup milk (scant) stir gradually to make smooth add: 1 teaspoon melted butter or oil cook in a hot frying pan, flip pancakes when they bubble, to brown the other side. Serve with Vermont maple syrup. These pancakes are sure to be tasty -- if you're watching your sodium intake, you can make them without salt and baking powder, which also contains sodium (as does milk), and they'll probably still be pretty good. We never add salt to anything, but when we omitted the baking powder the pancakes came out a little bit on the glue-ey side

The Bestest Fluffy Belgian Waffles

1/2 cup oil
2 cups milk
