Keep in mind that (according to Google Maps) the trip will take you 39 hours of driving. That's over a day and a half. That's with no stops. So unless you plan on switching off driving duties getting there in two days is going to be tight. You'll still need to stop to get gas, use the bathroom, pick up food to eat, etc. The weather will be cool if not cold, but assuming you're taking I-40 most of the ways, it's unlikely you'll encounter snow - with the exception of the Flagstaff, Arizona area, which is a rather high elevation.
It ain't gonna happen in 2 days regardless of what route you use :try a minimum of 3
I-40 starts getting snowy and and worse yet windy and /or icy around Oklahoma City and west
I have slid down the long grade from St Charles NM to the Rio Grande crossing at Albuquerque
Having lived in Northern Arizona I know for a fact that I -40 does occasionally get closed due to heavy snow from Winona to Ashfork ....and there are no alternative routings that won't add 6-8 hours onto your trip
Therefore
I-10 is the way to go
Time your trip so that you don't hit Houston or Phoenix at rush hour
Know that gas in AZ is always at least thirty cents a gallon cheaper in AZ than it is in CA
so fill up in Quartzite AZ
FYI
The way that mapquest et al generates their time to distance numbers is that they use the D/R =T formula
D= Distance
R= the posted speed limit
T is self explanatory
Over long distances it's almost impossible for your average mph to be that of the posted speed limit
Safe trip
You should be okay staying south. I'm a former 18 wheel semi-truck driver. I would go out to any large truck stops near my home and go into the coffee shop. Tell the drivers I sent you there (I'm your friend Tom - that married the Dispatcher to get better load's). They may laugh, but it's true. Anyway, (buy a folld out map of Southern U.S.A. if the truck stop has them). Let them show you on that map (using a yellow marker) 2 ways to go. One if it's snowing and one if it's not.
