Okay, so for Royal Caribbean, you have assigned seating in the dining room. This means that every night you will have a table at the dining room that you can come to. When you book the cruise, they ask if you want main or late seating. Main seating is at 6:00, and the late seating is at 8:30. Just because you have a seat in the dining room DOES NOT mean you have to eat there every night, it is just an option. There are 3 other restaurants and a cafe also available. There is the Windjammer Island Grill, which is open from breakfast, lunch and dinner every day. It is free, and buffet style. This is where 95% of people eat for breakfast and lunch. Then there is Portofinos, which is an Italian Eatery. It charges, but it is well worth it. This restaurant is only open for dinner. Then there is Johnny Rockets, which you probably know about. It is a 60's burger joint, that is open every day all day except for the last day, and first day at lunch. It is only open for lunch and dinner. And lastly is Cafe Promenade which has pastries, fruits, pizza, sandwiches, and drinks. This is open for breakfast, lunch and dinner, everyday of the trip, starting from when you get on at lunch. These are the options for a Voyager Class ship (standard size).

Royal Caribbean Dining
Royal Caribbean ships have a main dining room where most people eat dinner. There is an early seating, a late seating, and an anytime seating. You have to make a choice. If you choose the early or late, you sit at the same table each evening with the same table-mates.
Each ship also has a large buffet. Most people eat their breakfast and lunch there. You can eat at any time, and sit whereever you'd like.
If you'd like, you can eat all your meals in the dining room, or all in the buffet. You can switch back and forth. Both places are included in the cost of the cruise.
There are also some small places where you can get snacks, deserts, pizza, hot dogs, etc., that are also included in the price. You might eat there late in the evening. There is also a soft icecream and soft yogourt machine.
On some evenings there are midnight buffets on deck.
Then there are specialty restaurants where you pay extra to eat. I hope this answers your question.
Both Carnival and Royal Caribbean have Traditional (assigned time and table) dining. Royal Caribbean also has "My Time Dining", which is held in a section of the Main Dining Room; you sign up for either Traditional (early seating or late seating) or My Time Dining; you can't switch back and forth between them. Most Royal Caribbean ships also have at least one specialty restaurant (you pay extra to eat there).
And all cruise ships have a buffet restaurant, generally located at the back of the ship on the pool deck.

I have been on about 15 Royal Caribbean cruise; just came back from one last week. Royal, and all of the cruise lines, now offer the traditional seating where you select an early seating of 6:00 PM or a late seating of 8:30 PM AND as an alternative another option, which Royal calls MY TIME DINING, that allows you to go to dinner in the main dining room whenever you want between the hours of 6:00PM and 9:30 PM.
The anytime dining is called by different names on Carnival and other cruise lines but it works the same way. So any cruise line you select you can choose to go to dinner any time you want. In addition, every ship has a buffet that is open for dinner and you can choose to go there (free food) any day or time you want. Even if you select traditional or my time (anytime) dining you can still just go to the buffet if you want to.
Every cruise ship now has one or more "specialty " restaurants where there is a fee to eat dinner. The number and types of specialty restaurants varies by ship. But there is no need for you to plan to eat in a specialty restaurant as there are always options for you to eat just about any time for free.
I havent sailed on RC, but I heard that they only assign you to one dining room and if you would like to attend a different one, then you have to pay an extra fee.
Personally, Carnival is a huge no-no for me. It has so many safety problems and complaints about unsanitary conditions.
Carnival is a party boat.
