You did not mention which Royal Caribbean ship and that can make a difference in the answers. But I have been on 8 RC crusies on several different classes of their ships.
1. Yes all of the food is free except for, as you said Ben & Jerry's and specialty coffee. But if you buy a coffee the pastries come free with it. Johnny Rockets is one of the "specialty" restaurants on RC ships. The fee for food there is $3.95 per person but you can eat all you want of burgers, hot dogs, fries, onion rings (you do have to pay separately for soft drinks and milk shakes in JR). Then RC has two other specialty restaurants, Chops and Portofino, both of which have a gratuity fee of about $20 per visit per person. But you'll have so much free food to eat in the main dining room, the buffet and room service that you'll not need to go to a specialty place and pay a fee.
2. The answer to that depends on how active a mom you are and what you like to do. You'll have your choice of things like: using the full service gym with all types of exercise equipment; using the full service spa where you can get wraps, massages, and nails and/or hair done (fee for these); climbing the rock climbing wall; playing the 9-hole mini-golf course; roller skating (Voyager Class ships); ice skating (Voyager and class ships); using the surfing simulator (Freedom class ships); gambling in the casino and playing bingo; going to art auctions; shopping in the stores on ship; going to a show each evening; using the pools and hot tubs; going to demonstrations like ice carving or cooking; going to the disco at night; or just lounging all over the ship. Now this does not include all of the activities you will be able to participate in off the ship when you get to port stops. You can pay for tours and activities OR just get off the ship and go browse on your own.
I have never gone to Fuel to see if they dance there but I know its available and have seen the staff people preparing food there for the kids.
I love cruising and do 2 or 3 every year to be able to visit many great places and to enjoy relaxing on the ship. Some places that I have visited via cruise ship that I probably would never have gone to otherwise include; Rome; Pompeii; St Petersburg, Russia; Sydney, Australia; the Canary Islands; Rio, Brazil; and Gibraltar. And also the Panama Canal. visiting those were my favorite parts.
I have been on 8 RC cruises and a bunch more on other cruise lines and the food is always great. Breakfasts and lunches every day have just about any thing you may want to eat from soups, salads and sandwiches to hot meals, and deserts. Dinners are great with a variety of great selections and always great special of the day like fillet minion, prime rib, lobster, shrimp, lamb, baked fish, just to name a few. RC ships also have a standing alternative dinner menu that you can select from that includes steak, baked salmon, grilled chicken and several vegetables. They always have 2 or 3 salad and soup selections for dinner and you can even ask for items not on the menu and they will try to accommodate you.
the Standard cabin on RC ships are about 175 sq ft, about the size of a 8ft by 10 ft bedroom. There are some larger cabin in each category (outside, balcony and suites) that will provide more room. The standard cabins are fine with me and the one time we had a min-suite I didn't care for the extra space enough that I would pay for it again. BUT, I do always get a balcony cabin because in my opinion it WILL enhance your cruise experience. And, with that full length glass sliding door and window it makes the cabin look and feel much larger.
The room service by the cabin steward has always been great.

1) yes, the buffets were free and a other places but i dont remember specifics it was a couple years ago.
2) I went as a family and my brothers and I went off on our own most of the time other than dinner and the stopping points. my mother was with my dad and they had a blast. im not a mother, but my mom sure had fun.
3) I don't remember a place called Fuel (it very well could have been named Fuel) but I was under 18 on my cruise and definately remember going to the teen dance place. and yes people were dancing, including me and the friends i met on the cruise.
4) One of our stops was Bermuda and it was absolutely amazing. Favorite place ive ever been to.
5) The food was really good, especially when you have dinner with the whole family. Lobster tail night is unlimited!!
6) The rooms are small but really nice. The people who clean the rooms do a great job and are so funny. Atleast the guys I met. It's cool to have the balcony's to look out over the oceans. You will not be in your rooms a lot because you'll be enjoying the cruise!
Im 18 now, almost 19 and I was 17 when I went on the cruise. So I was in the 18 and under spots and stuff and I had a ton of fun and want to do it again someday soon. Anymore questions lemme know. I dont remember a ton of specifics but I do remember a lot.

Johnny Rocket has a $3.95 cover charge. They also charge extra for milkshakes. Ben& Jerry and pastry shop are extra too. Food was excellent.
