It depends on what type of files your iPod can read. CSV, LDIF and VCF are the only formats that the address book will EXPORT to. If iPod can't import any of those formats, you can't do it in one step. Outlook exports to several other formats, so you might need to export to Outlook, then export the Outlook file to a format iPod can read.
