Well for chistmas this year my mum has gotten me a turkey/chicken (cant remember which) roll of 'meat' but it's not meat, it's quorn I think, I've had some the other day and it was pretty nice,why don't you ask your parents to get you one to try before christmas and see if you like it,if you do have one for christmas if not,try other stuff like that =] (or if you dont live with your parent,buy one yourself and try it)
Well it depends if you are cooking or if you are going to someone else's house for dinner?
If you're going somewhere else then I suggest you take a main with you that can be shared in which case a lasagna or pasta dish is good as it isn't a replacement for the meat dish.
If you are the host then it really is all up to you! We are vegan and are hosting christmas dinner this year so here is what I'm planning to make:
An UnTurkey (see sources for link)
Vegan yorkshire puddings (see sources for link)
Roasted potatoes, kumera (sweet potato?) and pumpkin cooked in olive oil and rosemary
Yams (oca) cooked in maple syrup
Green beans and peas (both steamed from frozen - super quick)
Asparagus (also steamed but from fresh - you could sear or grill it if you like it better that way) served with a little avocado oil and salt
Cabbage casserole cooked with onion and tomato paste
A big dish full of sage and onion stuffing
Mushroom and onion gravy
I will do hummus with corn chips and carrot and celery sticks for appetizers. I have assigned omni family members to bring fruit for dessert or salads as this way they should be vegan dishes anyway and won't need any adjustment or effort on the guest's part. I may also make a vegan coleslaw (grated carrots and cabbage in a light dressing). I will make a vegan xmas cake a few days ahead - if you're not vegan then the cake and pudding shouldn't be a problem anyway.
How about vegetarian lasagna or cabbage rolls stuffed with rice and vegetables and seasoned and topped off with sauce. You could even add Morningstar products as ingredients. You can use vegetable broth to make gravy.
I'm not a cook but those are off the top of my head.
Quorn (http://www.quorn.co.uk/) have loads of alternatives like quorn chicken roast and mini cocktail sausages as well as mini sausage rolls, spring rolls, mini kievs etc.
Then just all the usual veggies like roasted potatoes, honey roasted parsnips, peas etc and you can also make vegetarian stuffings like nut stuffings or fruit stuffings!
I was going to make a nice spinach lasagna for Christmas. That way I don't have to make a bunch of sides to go with it...it's sort of all-inclusive. lol.
I made a big meal for Thanksgiving, so I think I'm doing a one-dish meal this time around.
this is what im going to do, eat the veggies and etc just not the meat, also if you want something then you can make something with Quorn they have some great recipes:)

Portobello mushrooms are always good too.
Simple. Make all the veggies things you like about the dinner and not do meat.
Broccoli Cheese and rice (if you do dairy) has no meat in it and you use veggie broth or water for the rice...its vegetarian.
Any steamed veggie is great.
Candied yams has brown sugar, butter (if you use it) and water with the yams.
green bean cassarole can be modified to what ever you want in it
use your imaganation.
There are so many alternatives.
