Every year my family celebrates the Italian tradition of the feast of seven fishes. The menu consists of pretty much nothing but fish. This year I would really love to bring a vegetarian dish for me and my veggie hubby, but I'm having a hard time thinking of something that would 1. mesh with the current menu and 2. be approachable and delicious to non-vegetarians. Thanks for any help!

Being half Italian I can sympathise. However, there are lots of dishes that can make up a seven fishes dinner- and you can make amazing things for each dish.
A baked tofu and fennel dish- using wine in the gravy, with peppercorns, some milk, bayleaf, onions etc- this would go great with fresh tofu. THis would be like a simmered fish dish. Please try get fresh and do NOT get that horrible stuff in plastic tubs. Go to a good Asian market, or find it made fresh locally. Most people who've only had that plastic tub stuff say they don't like it much, that it doesn't taste of anything. That is so not the truth. It tastes very much of beans, peanutty and fresh, almost like a fresh french loaf- pulls apart the same way. SO - PLEASE get a bloack of freshlymade tofu ( you may have to call around some Thai or Korean supermarkets and ask them what time it's brought in).
Fried gluten abalone- this is like a mock abalone that you can find in any asia market- it comes from the same comapny that makes "mock duck"= it's a fried gluten preparation, made for BUddhist monks in Thailand and China who can't eat meat. and it's delicious. THey make mock duck, mock tuna, mock abalone. I love the Mock DUck, but never had the tuna or abalone.
Deep fry it like oysters- serve on kale leaves which you've crisped with olive oil in the oven, salt and pepper, and serve ith lemon wedges.
A tofu tuna- again go to an Asian store for this. A good one,( I'm lucky there are lots near me) caters to local Thai restaurants and they sell vegetarian tuna. You can make a tuna loaf out of this- add egg or onion, garlic, spices and shape it into a loaf.
Fried artichokes- with lemon and a lightly spiced breading. Serve with lemon, tomatoes and lima bean salad- lima beans, tomatoe, vinaigrette, salt and pepper.
Fava bean and wil spinach paste= this is a very authentic southern Italian dish. Use as much garlic, olive oil, fava bean puree ( mash them) and wild greens ( put them beside the fava puree) as you can. Nobody hates this dish, it might sound boring, but it is delizioso. You can even fashion the fave pasta into a fish shape and decorate with cucumber slices or fresh leaves of spinach.
Hijiki salad with piselli ( peas) and aragula - soak some hijiki ( very cheap, easy to find, seaweed) in some apple juice or boile gently for five minutes them let sit til cool and drain. Add the blacnhed green peas, some aragula and diced onion. Add a little sage, salt, pepper and parmesan. You would not believe how amaing this hijiki is - it looks lke black pasta and tastes mild, nutty, rich and chewy. SO good with the peas, and such a pretty dish. Seaweed- close to fish.....
Hope that helped some. The hijiki one- go for it. Add whicever veg you like, but tiny green peas ( not canne,d only fresh or frozen) are just gorgeous with it.
There's always meat subsitutes that tase (sort of) like meat and look like it. Or maybe a veggie dish? Like brussel sprouts or broccoli or beans! You can bake them with salt and olive oil and it works great with fish or meat or just by itself

I bought a cookbook from a raw food website and made one of their salads and it was to die for!!! They also had some great vegetarian appetizers and if you eat enough of those they are a meal! I made one of their side dishes and everyone loved it. Good Luck
