I'm looking to increase my vertical jump right now and somehow trying to fit a vertical training routine into my current weight training in which I do legs every other day. (Mon, Wed, Friday) How often should I be doing vertical training with my current routine, and should I do it before or after weight training? (squats, leg extensions, etc)

You cannot do your vertical jump training after your weight training. This will hurt your vertical because you are over training and you can risk injury.
Increasing your vertical isnt only about squats and leg extensions though, it's more exercises and more importantly to increase your vertical you need to know HOW to do them to train explosiveness and not endurance.
I am only 5'6, I was always a natural jumper, I had around a 32-35 inch vertical without training or anything. I am a baskteball player so of course my dream was to dunk. I learned the CORRECT ways to do it and now I have a 48 inch vertical :)
You can see an inch a week if you train correctly but I am 100% sure you dont know the first thing about increasing your vert.
p.s. You will be able to fit in your vertical training with your weight training
Overall increasing your vertical comes down to about 4 main points
1) Lose any extra body fat you might have, this fat is what i call anchor fat because it holds you down.
2) Eat healthy and drink a lot of water, if your urine is not crystal clear than you are not drinking enough water.
3) Fix your broken jumping technique (A LOT of people completely look past this and because it they fail)
4) Learn the CORRECT exercises to do and HOW to do them. The how part is crucial because you can do squats or calf raises all you want but if you do not do it the correct way than you will actually hurt your vertical.
( The 3rd and 4th points are the most crucial part of increasing your vert)
Utilize all 4 points and you'll increase your vertical.

Do the vertical jump training immediately after lifting, then your recovery will be the same.
Just like lifting the recovery is more important than the training, if you do not recover you will get weaker.
We normally lift then do plyometrics.
If you train very hard, you may need two days to recovery not just one.
