First there are a lot of good cameras on the market be it digital SLR cameras or film but there is more to it than just the camera. You have to have good lenses, good lighting and how to control it. Plus the main ingredient is the creative eye and knowledge to convey a mood. It comes down to the fact that a good portrait can be shot with a basic point and shoot camera but it is the photographer and model that create the image.
Use a 67 format, several manufacturers, and shoot on transparency film. I would suggest either a Mamiya RB67 or a Mamiya RZ 67 with a 140, 150, or 180mm lens. Since this is not a 35mm film, the 140, 150 and 180 are not the same focal lengths for a 35mm camera. For portrait, Mamiya has a 150 and 140 soft focus lens, that are spectacular, but for straight shooting, you don't want a soft focus. Used RB and RG cameras are reasonable, the the lenses are expensive.
Because fasion photography usually requires large prints, you are either going to need something that produces a large negative or a lot of megapixels. Most medium - large format cameras nowdays can also get a digital back which allows for digital previews right when the photo is taken (along with other various features).
If you are going digital, I'd suggest a camera at least 14mgp in size. Cameras such as Canon EOS-1DS Mark II and FinePix S5 Pro are great up to 15mgp. Digital is rapidly taking over in the equipment field but the Hassalblad has been the undisputed king for at least 40 years and since the fashion industry is rooted in "image" it may be the answer. You can get Polaroid and digital adapters for it and look like a real pro - whatever that image is.
