A plasma TV functions a lot like a fluorescent light, using gasses to produce the picture. LCD, or liquid crystalline display has millions of liquid crystals that display the picture (much like a cell phone screen).
If you're looking to buy a tv, LCD is the way to go. They're lighter, have better picture quality, are easier and cheaper to fix, can be laid down for transporation (while plasma tv's must stay standing up), and last much longer.

Edit: You can adjust the brightness on an LCD tv, you don't have to have it so bright that it gives you headaches.
In my experience, it's the opposite of what the other guy said. I have trouble seeing plasma tv's at an angle while the LCD picture quality is maintained. Honestly, plasma tv's are on their way out.
Instead of me or someone else trying to explain the difference, I want you to go online to Home Theater Magazine and read the pro and con for both technology. Plasma is still considered to have the best picture quality on any tv (HTM rates the Pioneer KURO 60" Plasma as the best overall tv in the market, but carries a hefty price of $7,000). Look at both tv from an angle and you will notice that the plasma tv maintains it's picture quality, while the LCD or LED tv picture is degraded. LCD and LED have problems with blur motion, to reduce the blur motion on fast action movement you need to get the 120HZ or the 240HZ refresh rate which comes at a higher price, and on plasma you don't have to worry. Plasma tv is more pleasant to the eye when watching movies at home, LCD tvs are brighter and can give you head aches when watching movies in a darker room. You will also notice that on the magazine there are more plasma tvs recommended in each price category from entry level to the high end. Plasma is also less expensive that the LCD or LED tvs. Hope this will help you out.
