I have just gotten and old Xbox 360 (white) from my neighbor and it had the rrod so I fixed it and it was working. I had it fixed and it was working properly for about another but it was getting hot so I wanted to put another fan in. I was using

to find power outlets as I was trying out the third image (the one with the caption starting "Here is the older good 5v spot and is still a good place to get 5v from") and the yellow and blue connections. I think I might have shorted something out while trying it and now I have the rrod. Does anyone know if this could happen or what the problem is

I'm almost positive that you ruined one or both of your MOSFETS. I'm not sure why people tell other people to use these as power supplies. They are very sensitive to heat and electricity. The only reason not to use the spots under the board (the first picture in your link) is if they are already powering other things, if they are damaged, or if for some reason your wires physically can't reach them. If all you are doing is adding a fan, always go under the PSU socket!
Now, to confirm what your red ring cause is, find your secondary error code. You get this by powering up your console. After the 3 rings comes up, push and hold the controller synch button on your console. While holding it, pust the eject button and note how many lights are blinking. 4 lights is code for 0. 3 for 3, 2 for 2 and 1 for 1. Push the eject button 3 more times and you have your 4-digit error code. I'm almost positive that yours will be 0002, although 0020, 0021, 0022, and 0023 are possible too.
