Chickpea "chicken" Salad sandwich/wrap.
Pita Bread and veggie sticks with hummus
Falafel with tzatziki in pita bread
1 cup of vanilla yogurt + 1/2 cup of fruit and nuts + 1/2 cup of granola.
If you eat eggs, Egg salad sandwich/wrap
Flatbread pizza
Bagel with peanut butter and sliced banana (and honey!)
Vegetable sushi rolls
Bean Burritos- Mix vegetarian refried beans with black beans and diced tomato, put that filling in a tortilla and wrap it up like a burrito. Put the burrito in a pan with cheese on top and bake until the cheese melts. Pack the burrito for lunch with a fork, knife, sour cream/guacamole/salsa.
Tacos- Mix vegetarian refried beans with salsa and black beans. Pack this in a container as a filling, and pack tortillas, lettuce, tomato, sour cream, avocado, and cheese in other containers. Put it together when you get to lunch.
Pasta Salad
Cold Vegetarian Chili with whole grain crackers. A yogurt and fruit salad.
Hummus, Feta, roasted red pepper, thinly sliced zucchini, and sliced tomato or sliced black olives in a whole wheat pita bread.
Healthy fried rice. Don't do it like the Japanese and Chinese restaurants do though. Add enough veggies to make it healthy. Try to make it like 50/50. A serving of this is 1 cup cooked btw.
So whole grain rice cooked. Frozen peas, thinly sliced carrots, chopped onion and if you are an ovo-vegetarian then add an egg too. If not then don't add it. Cook each veggie separately since they each have different cooking times. When each is tender add olive oil to a pan and heat it up. Cook your egg and when it's done combine everything in the hot oil and saute for about 3 minutes. You can add soy sauce if you want. Put this in with a frozen pack to keep it from spoiling.
You can do a ton with peanut butter besides ppj. You can do peanut butter coconut sandwiches, peanut butter and banana, peanut butter and raisins, peanut butter and any dried fruit. Also if you like curry you can make a vegetarian curry the night before and bring it. You don't have to limit yourself when it comes to lunch.
When it's warm, I have lentil salad or hummus/bean dip with vegetables.
When it's cool, I have lentil or bean soup.
If you eat eggs, a frittata might be a good idea too.
you can make a wrap out of various vegetables you enjoy or a pasta salad with various vegetables and a nice salad dressing you like
Lightlife fake meats! Ham, turkey,

Try cucumber sandwiches, cucumber and mayo on bread, yummy.
