I agree that www.vegweb.com is great--all the recipes are vegan, and there are resources for veg*ans as well.
A number of people on here have suggested www.veganwolf.com, which also has some recipes, but I haven't tried any yet.
If you're an omnivore and she's veg, you may also want to invest in a book called "The Vegetarian Meat and Potatoes Cookbook" by Robin Robertson. Sarah Kramer has co-written two cookbooks (with Tanya Barnard) and done a third solo project--"How it All Vegan," "Garden of Vegan," and "La Dolce Vegan," and all have some really nice recipes, some easier than others.
Great recipes and if you are vegetarian can probably change you into one as well! best of luck! Plus the recipes are lots of fun to make, except for the waffle ones, ignore those. Also try following regular recipes and add replacement,s they make dairy and egg replacements, plus mock meat so it should be simple! Best of luck!
some determination thoughts: salad, green beans, mashed cauliflower, cabbage (steamed, fried, or cole slaw - make the dressing with mayo and vinegar or lemon juice)....there are low carb tortillas you are going to be able to desire to apply to make cheese or veggie quesadillas... variety "low carb recipes" into your seek engine, you will locate a great number of stuff. i've got been low carbing on and rancid in view that final Sept...that is a project at circumstances...desire you're starting to be the outcomes you want ...get excitement from!
I've only used www.vegweb.com for my recipes. Majority of their recipes are vegan. They have an awesome vegan recipe called "Cheesy Lasagna", which I'm sure you would enjoy, too: http://vegweb.com/index.php?topic=8013.0

Here is a website that I always use when cooking myself something -
http://www.vegcooking.com/searchrecipes.asp
Also, for a recipe of my own, How about a veggie stir fry? (makes one serving)
You need-
-1 cup of rice
-1/2 cup of your choice of vegetables (I suggest eggplant, green peppers, broccoli and carrots)
-2 tablespoons of cooking oil (canola and olive are best)
-1 to 4 teaspoons of soy sauce (depending on how much you like)
to make-
1. Fill a pot with water and boil the rice
2. While rice is boiling, add vegetables and oil to a frying pan, on medium heat.
3. When rice is done, add it to the pan of vegetables and slightly lower heat.
4. Add soy sauce and enjoy!
