Top firms pay lawyers $160,000 a year. Okay. Lawyers represent clients, and these clients have to pay their lawyer. If I am a lawyer for Firm X, and I win a $75-million-dollar lawsuit, don't I get a piece of that? But what if I dont get called for any cases? Do I still make my $160,000 salary?

Top law firms do not hire criminal defense attorneys - that is just not their practice area. Most large law firms will practice in corporate, financial services, white collar and intellectual property. Additionally, only the top 5 or so paying law firms are paying $160k and they only hire about 20 graduates per year firm wide from the top 1-2% of the top 15-20 law schools.
A criminal defense attorney would not try a $75M lawsuit. That is the job of a civil trial attorney, Even then, the attorney that tries the case will not get a cut of the proceeds - the firm would be paid the contingency fee. That fee will have to cover all of the attorneys, support staff and miscellaneous expenses (such as copying, long distance, travel, witness fees, etc.). The trial attorney may receive a bonus (depending upon his employment arrangement), but it would be a very, very small portion of the contingency fee.
Most criminal defense attorneys are either sole practitioners or work for very small firms. In these instances, you do not get a salary, but instead you get a cut of the firm's profits. If you do not get cases, then there won't be any profits for you to get a cut. In the rare instance where you are hired on salary for the rare mid-sized criminal defense firm or the public defender's office, you will receive your salary for showing up for work, though in your first couple of years, you will most likely be the junior attorney and performing support work, not actually leading a person's defense. These types of jobs are VERY low paying - think around $40k-$50k (this is actually less than the typical salary of paralegals at a large law firm). If the firm's client base does not provide enough hours for you to work, then they will lay people off - starting with the attorneys that do not make their billable hour requirements.
