My school's annual cookie contest is coming up, and last year my chocolate macarons...weren't really macarons at all...so I want to make a better impression. Does anyone have a delicious and fairly easy cookie recipe that they would like to share? If possible, please give a recipe that you have successfully made before, not just a link to a recipe site. And no nuts please, as I am allergic to them. Thanks! =)

Pumpkin Spice Cookies
Ingredients
2 1/2 cups all-purpose flour
1 cup rolled oats
4 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon pumpkin pie spice
1/2 teaspoon ground ginger
1/4 teaspoon salt
2 tablespoons butter
1 1/3 cups light brown sugar
2 eggs
1 teaspoon vanilla extract
1 (15 ounce) can pumpkin
1/2 cup apple butter
1 cup chopped walnuts
Directions
1-Preheat an oven to 375 degrees F (190 degrees C). Grease 2 baking sheets.
2-Stir the flour, oats, baking powder, cinnamon, nutmeg, pumpkin pie spice, ginger, and salt in a bowl.
3-Beat the butter and brown sugar with an electric mixer in a large bowl until smooth. Add 1 egg and allow it to blend into the mixture before adding the other along with the vanilla. Add the pumpkin and apple butter; continue beating. Mix in the flour mixture until just incorporated. Fold in the walnuts, mixing just enough to evenly combine. Drop spoonfuls of the dough 2 inches apart onto the prepared baking sheets.
4-Bake in the preheated oven until the edges are golden, about 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.
Chocolate Fruit Cookies Recipe
Ingredients
1 ½ cup all purpose flour
½ teaspoon baking powder
2 eggs
1 cup white sugar
1 teaspoon vanilla essence
½ cup nut meats, finely chopped
½ cup seeded raisins, finely chopped
100gms rich chocolate
100gms butter
Pinch of salt
Preparation Instructions
1. Melt the butter in a pan and add the chocolate, making a paste. Stir occasionally.
2. In a separate bowl, mix the flour, baking powder, and salt.
3. Mix the white sugar and eggs until fluffy and smooth. Add the vanilla essence and mix well.
4. Add the chocolate and butter mixture. Gradually add the dry ingredients then add all remaining ingredients.
5. Grease a baking dish with oil or butter and drop spoonfuls of cookie dough at least two inches apart. Bake in a 350 degrees F oven for 10 minutes, or until a knife inserted in the center comes out clean.
6. Serve hot with Molten Chocolate and Vanilla Ice-cream.
oatmeal & chocolate cookies:-
Ingredients: Oven temp: 350 F
1/2 cup brown sugar - firmly packed
1/2 cup granulated sugar
1/2 cup butter
1 egg
1 tsp vanilla essence
1 tbsp milk
1 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup quick cooking oats
1/2 cup chocolate chips (or chocolate cut into small pieces)
Method: Place the brown sugar, sugar, butter, egg, vanilla and milk in a bowl and beat smooth.
Add the flour, soda, baking powder, salt and continue to beat till smooth.
Add the oats and chocolate.
Mix well and drop a heaped teaspoonful of these on the baking sheet and bake for 15 to 20 minutes or till a light brown.
WALNUT COOKIES:-
Ingredients: 1 cup flour
1/2 cup powdered walnuts
1 egg
1/2 cup butter
1/2 cup powdered sugar
1 tsp vanilla essence
Method: Mix flour, walnuts, egg, butter, sugar and vanilla essence together. Whip till it forms a smooth dough.
Make 24 small balls and flatten with a fork.
Place six at a time on a microwave baking tray or lightly greased greaseproof paper and cook at 100 per cent for 1 1/2 - 2 1/4 minutes, depending on the size of the cookies.
Give the tray a half turn halfway through the cooking time.
Allow to cool on a wire rack. Repeat with the remaining mixture.
CHOCOLATE CHIP COOKIES:-
Ingredients:
Oven Temp: 375 F-180 C
1/4 cup butter
1 tsp butter
1/2 cup sugar
1 egg
1 tsp Vanilla essence
1 cup maida
1/2 tsp baking powder
1/4 tsp salt
1/2 cup chocolate chips (you get them in packets, or you can chop semi-sweet chocolate into tiny chips)
Method: Mix the butter, sugar and egg. Add vanilla.
Mix the flour, baking powder and salt together. Add this to the butter mixture and mix well.
Add the chocolate chips and mix well.
Shape dough into rounds and place on an ungreased baking tray at least 1" apart.
Press with the base of a glass or any flat tool.
Bake in a pre-heated oven for about 15 minutes.
Serve or cool and store in an airtight

INGREDIENTS
1 package (7 ounces) sweetened shredded coconut
1 1/2 cups pecan halves
Nonstick cooking spray
1 package (10 ounces) marshmallows
4 tablespoons unsalted butter
4 cups cornflakes
DIRECTIONS
STEP 1
Preheat oven to 350. Spread coconut on one side of a large rimmed baking sheet, and pecans on other side, keeping them separate. Toast until fragrant, 15 to 20 minutes, tossing occasionally.
STEP 2
Meanwhile, coat an 8-inch square baking pan with cooking spray; line with a strip of waxed paper (leaving an overhang on two sides). Spray paper.
STEP 3
In a large nonstick pot over medium-low, heat marshmallows and butter until melted, 5 to 10 minutes, stirring frequently.
STEP 4
Stir in cornflakes, coconut, and pecans. Transfer to prepared pan; press in firmly with a metal spatula (coated with spray to prevent sticking). Cool until firm, about 2 hours. Remove from pan; peel off paper. Using a serrated knife, cut into squares.
