In a large bowl, cream together the shortening, butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and coffee liqueur. Combine the flour, baking soda, and salt; stir into the sugar mixture. Mix in the oats, chocolate chips, and walnuts. Roll tablespoonfuls of dough into balls, and place them 2 inches apart onto the prepared cookie sheets.
Bake for 10 to 12 minutes in the preheated oven, or until golden. Cool on a wire rack for a few minutes before eating!

Here's a good one, that we all love..use the back of the chocolate chip bag recipe and only add 2 cups of flour, and use 1 cup of oatmeal and 2 tablespoons of creamy peanut butter, mix this all together and bake only for 10 minutes at 375 F. this will come out very moist and chewy..I make this all the time and even at bake sales too..enjoy..=)

Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

3 tablespoons white sugar
1 tablespoon ground cinnamon
1 cup dark brown sugar
1/2 cup white sugar
1 cup butter, softened
2 eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
Directions
Preheat oven to 300 degrees F (150 degrees C).
Combine the 3 tablespoons white sugar and the cinnamon in a small bowl and set aside.
Blend dark brown sugar and white sugar in a large bowl with mixer on medium speed. Add butter and blend until grainy. Add eggs and vanilla extract, mixing until light and fluffy.
Whisk flour, baking soda and salt together in a separate bowl. Add to sugar mixture, mixing at low speed just long enough to combine. Overmixing makes tough cookies!
Roll dough into 1inch balls, then roll each ball into cinnamon-sugar to coat. Place cookies on ungreased cookie sheets and bake at 300 degrees F (150 degrees C) for 18 to 20 minutes. Remove from sheets and let cool on racks.
Everyone of all ages absolutely loves these! They're really easy (kids can help you make them) and you can use different mixes for a variety of cookies!
