***Potato Salad***
4 medium-sized red potatoes
4 medium-sized white potatoes
1 lemon, zested and juiced
1 tablespoon Dijon mustard
Salt and pepper
1/3 cup olive oil
1 red onion, finely chopped
1 red bell pepper, finely chopped
1/4 cup finely chopped parsley leaves
2 scallions, thinly sliced
Place potatoes in a large pot and cover with water. Bring to a boil and cook for about 20 minutes; the potatoes are done when a knife is easily inserted into the potato. Drain and cool potatoes in the refrigerator for approximately 20 minutes
In a large bowl, combine the lemon zest, lemon juice, and mustard. Season, to taste, with salt and pepper. Slowly whisk in the olive oil. Add red onion, red pepper, parsley, and scallions and stir to combine and coat with the dressing. Season, to taste, with salt and pepper.
Remove potatoes from refrigerator cut into eighths or bite-size pieces. Add potatoes to bowl and toss to combine. Adjust seasonings, if necessary.
The thing that makes most recipes fattening is the fat content and most recipes have far to much if you remember this and cut the fat by half or even less any recipe you have becomes low fat. Fried onions are very high in calories but you can actually dry fry onion by putting just water in the pan no fat fried onions. Try this I,m sure you will find it works.

Cucumbers are perfect.
Cucumber Fried Rice
1 pound of rice
1 tbsp cucumbers
1 tsp salt
2 cups oil
Cook the rice and oil.
Cook about a few minutes.
Cut the cucumbers into 2 quarters.
Add the cucumbers, if it's almost done.
Add the salt
Mix the salt together, with the other ingredients.
Done
