First of all if you are going to be making videos you want a desktop. If you cannot get a desktop or absolutely must have a MacBook for it get the best processor you can because it is going to take a really long time to render on it. A desktop PC will be drastically faster in this department.

If you do get a MacBook Pro the 15" is going to be a little better for screen real estate. If you do a lot of editing you will learn that screen size is very valuable but again it is a personal thing. If you think you can tolerate a 13" screen in this area then by all means go for it but I honestly cannot.

If you do photoshop you may want to opt for an anti-glare screen or your edits will always be slightly off if you intend to print any of them out.

Also for capture you will need to buy a program to do it. I personally use HDPVR Capture:

It is a $30 piece of software but it is great at capturing video. I like it better than the actual HDPVR's software.

You will also want to look into a program like http://camtwiststudio.com/ if you ever intend to do streaming. It is free.

For video editing, you'll want the 15. The 13 has a dual-core processor and the 15 has a quad-core processor, and iMovie (the video editing software that comes standard with a Mac) takes advantage of multiple processor cores, as does most any other video editing software.

Also, if cost is a factor, take a look at Apple's refurbished laptops on their online store. They have the same warranty but are much less expensive than brand-new.
