I want to apply for a police academy, however i have a mental illness record where a psychiatrist thought i had bipolar. I never took medication for it (just anxiety meds for a month or two) and have never went to a hospital for mental illness. Its been over two years since the diagnosis, and i haven't been on any medication or seen a psychologist since (it was one at the college i attend). Would i still be able to apply for the academy? And get a LE job after completion?

it depends if you pass the physcological part of the test.
usually by the answers you put, the physcologist will be able to determine if you are stable or not
