You probably have anyone of the following problems;

1. To many Quest, Side Quest or Miscellaneous Quest (kill these off and only keep a minimum number active)

2. To much Gear (Check especially potions, miscellaneous) If you are moving slow walking instead of running its a good sign you are carrying to much.

3. Save more often even if it glitches you won't lose as much progress

Try any of these methods to resolve your problem or if the game seems to be lagging or glitchy;

Go punch a guard and choose the "Go to Jail" option; this tends to reset the game

OR

Go to a chest or barrel in your house dump everything you have in it, SAVE, Quit the Game, Turn your System off, Start the system pick up your stuff

OR

Go take up or Switch quest; then do the whole quest without Fast Travel (walk, run or ride your horse) until complete

OR

Keep going in and out of buildings; this builds up your "Auto Save" log, but it also overwrites other, older ones...then SAVE.

Unfortunately that's a problem with the PS3 version that hasn't been fixed. You might want to try the official tech support forums, other players there might be able to help you out.

if you turn off all the auto save options. Its only thing i can think of. Also how large is your save file? Because if it is somehow too big, it may effect. But if is too big there arent much you can do anyway. But try but auto save off.
