I'm a vegetarian, but I don't eat eggs or fish so most of the recipes that I currently make won't include either. I'm a teenager who can't cook very well so the following are pretty simple, but tasty. =)
-Pasta with red sauce and beans. Just boil some water, add the pasta, drain when ready, pour in your desired amount of canned beans, add red sauce. So far I've used soybeans and kidney beans. Tastes good enough to me.
-Rice and beans. Similar to above. I really love brown rice with white beans. You could eat it plain or put it in a wrap with some vegetables.
-Salads are always good- I use almonds, tomatoes, cucumber, bell pepper, avocado when I can find it, and croutons. I used to top it with feta cheese or tuna before I turned vegetarian and tried cutting down on the dairy. You could also add some fruit on the top. A healthier dressing choice would be some lemon and vinegar.
-Making fish isn't too hard. Before I used to top it with some lemon or pepper. Make it in the oven, takes half an hour to 45 minutes I think. Make a side of vegetables (asparagus, broccoli are easy) or with a salad or some rice.
-Meatless lasagna or you could even make a vegetable lasagna
-Peta with humus, diced tomatoes, and cucumber. You could make falafel, it can be a mess though.
-Stir fry: I use frozen veggies, make some pasta add them together and add some sauce. Sometimes I like to add tempeh or peanuts to it.
-There are many frozen meat substitutes, though they aren't as good for you it is a lot easier sometimes. I like Amy's veggie burgers.
-You could create your own pizza
There are plenty of recipes out there. Although some aren't as easy as sticking it in the microwave you'll have a great variety and once you get the hang of it some great tasting dinners! Have fun, experiment you may find something you like.
Here are some good sites:

and there are some good cookbooks out there, too. I recommend "Cooking Southern, Vegetarian Style" by Ann Jackson and "The Best 125 Vegetarian Main Dishes" by Toomay/Geiskopf-Hadler.
Also, there are some great new products coming out, like Quorn's Cranberry and Goat Cheese Cutlets and Morningstar Farms Italian Sausages. Every product Field Roast Grain Company makes is fabulous! So experiment, browse your large supermarket and health food stores. There's no need to be a bored vegetarian!
Edited - technically, you're a pescetarian, but that's neither here nor there. Some things I really like making are...
Mark Bittman's blog at the NY Times has a lot of unique vegetarian ideas:

Alfredo sauce pasta - goes well with shrimp or veggies:

I like to thicken the sauce a little, though, with cornstarch.
* Salmon fillets - soak in Kikkoman teriyaki sauce, or soak with a mixture of maple syrup and 1 tsp dijon mustard; grill.
Frozen dinners for EIGHT YEARS? OMG, you really need to get out of being vegetarian if this is what it cost you.
