My yabby is small, about two inches long. I have had it (haven't checked sex) for about three weeks in a small tank. The tank is well aerated and filtered.
I built a great cave for my yabby with rocks, driftwood and a small. He loves it! Cleared a back entrance through the gravel and spends a lot of time in there. Too much for my liking, just because I want to see him more often.
I am certain he is healthy. He gets a wide variety of food, which is never allowed to spoil.
He comes out more often when I turn out my room light.
He moulted last week. How long does it take them to fully harden after a moulting? Is he hiding lots due to this? Is it just an individual thing?

crawfish are nocturnal animals and will not come out during the day unless they are in an area free of predators (explains why he comes out when the lights are off). my crawfish will not come out of his cave for about 3 days after molting. if you want him to come out more i would suggest you add some more decorations (plants, driftwood) around the tank to make him/her feel secure
Probably because he is getting used to the tank, or the tank is just too small for him to roam around in, even if he is around 2".
Yabbies do enjoy hiding in caves, most commonly dams in the wild, so it might be a little while before he gets used to you and his new home.
