so my question is pretty basic, is there anyway to incorporate both a blue combo like full up to blue eyes shining capability and a red eyes combo with fusions and red eyes darkness capability without having the deck completely suck for having to many high star monsters

The deck will be to busy. You should choose between raw power or looking pretty with raw power. As in ether fusions or blue eyes.
Unfortunately, a deck has to have at least two level 4 or lower monster for every level 7 or higher monster. The fusion for Red-Eyes Black Dragon is Black Skull Dragon and Meteor Black Dragon. Meteor Black Dragon requires one Red-Eyes Black Dragon and one Meteor Dragon. unfortunately, Meteor Black Dragon is not a good card to run, even if you have support cards for this. Black Skull Dragon requires Summoned Skull and Red-Eyes Black Dragon. Running Summoned Skull and Red-Eyes just isn't a good idea. Blue-Eyes Shining Dragon is a collector's item. I do want to run it in a deck myself one of these days, but unless you get Blue-Eyes Ultimate Dragon out quickly, it will just be a dead draw. While Blue-Eyes Shining Dragon on the field grants it 500 attack points per dragon in the grave. If you're going to run Blue-Eyes Shining Dragon, then it would be best if you build a deck without Red-Eyes or any of the fusion for Red-Eyes. Sadly, this deck idea won't flourish all that well.
