This recipe is SO good. It's Vegan but you can substitute the Tofu for Ricotta or mix the 2 together.
Tofu Manicotti
1 pd Manicotti pasta
2 pds firm or soft Tofu, patted dry and mashed
2 cloves Garlic, minced
1/2 Soy Milk (or low fat milk)
2 Tbsp Olive Oil
2 Tbsp lemon Juice
1 Tbsp Sugar
Salt and Pepper to taste
2 Tbsp minced parsley
1 C chopped fresh Spinach. Optional since, oddly, she doesn't like vegetables.
4 C homeade or store bought Tomato Sauce
Prepare Manicotti according to package. Gently drain and rinse. Preheat oven 350 degrees. Mix everything from Tofu to Spinach,if using, in large bowl. Line 9x13 baking dish with 2 cups Sauce. Spoon mixture into each Manicotti shell until they are full. Place filled pasta in 1 layer on top of sauce. Pour remaining sauce over pasta. Cover dish tightly with foil. Bake 30 mins or until sauce bubbles. Serves 4.
