I just bought both the Annihilation and Rezurrection DLCs for Black Ops on my Xbox, but I am wanting to temporarily delete the Annihilation one (because I don't really like the online map rotation with those maps). I read that you can delete it and download it again, but I am wanting to know how to delete it correctly (I don't want to delete it and later find out I did it the wrong way so I can't re-download it).

Go to the system settings on your dashboard and go to memory -> black ops -> annialation -> delete. Since you have already purchased it before you can re download it for free by goin to the marketplace and downloading it again.

If at any time you want to redowload this just go back to the marketplace and select redownload and it will redownload it
You delete the "game data" (the part that installed to your Xbox 360)
Note that this also deletes the patches, so you have to redownload the patch.
But you can never delete it so that you can't re-download it, it's linked to your account
