All three cameras are very similar. They are all point and shoot, all record Full HD movies and all use the same battery. They also feature the exact same sized image sensor and same amount of MP, so image quality should be very similar...

Here are the main differences...
100 HS...4x optical zoom, 3" LCD screen-230,000 dots, mono audio recording
300 HS...5x optical zoom, 2.7" LCD screen-230,000 dots, stereo audio recording
310 HS...8x optical zoom, 3" LCD screen-461,000 dots, stereo audio recording
I would choose the ELPH 310 HS because it has 8x optical zoom, has a large, high resolution LCD screen and records audio in stereo. Battery life is only around 210 shots per full charge...it's because of that large, high resolution, LCD screen. So, to avoid running out of battery power, simply give it a top up charge any time you like or before you use the camera for the day.
However, using the flash, movie recording, reviewing your images or movies...even using the zoom frequently, all add to lessening your battery life.
The ELPH 300 would be the second choice (I really like that it comes in a black body colour). It also has a slightly wider 24mm starting lens compared to 28mm on the others, but that's no big deal.

You will also need to buy an SDHC Memory Card...4 GB should be more than adequate, but I recommend 8GB if you are planning on recording Full HD movies also, because movies files are large. You will NEED to buy a Class 10 SDHC memory card (you will need it for recording Full HD movies). Remember to Format it before you use it the very first time (the Camera User Guide shows you how).

From the research i have conducted on the three, it seems as if the 300 is better. The 100 is out of the race first up because of the 310 and 300's wider lenses, but also because of the larger selection of manual controls. Personally, I wouldn't pick any of them because they are way too basic.... they don't even have manual shooting modes!
Without manual controls you are very VERY limited in what you can do, and very limited in how much you can learn from and grow with the camera. It also not possibly to attach a decent external flash, so all you'll ever have is that very inadequate little thing on the camera.
If you're happy to forever stay on Auto, take simple little snapshots and let the camera decide what to do, then you'll probably be happy enough with it, especially if you intend to only take photos in excellent light conditions - they'll turn out quite well then.
If you want to learn, improve and get creative, then this is not the right tool for you. You need something with more options and more controls.
