Lets say I buy an amplifier that says it pushes 1200 watts @ 1 ohm...
Simply.. will it? or is it going to be like 1000 or 1100 or some stupid ****..
I got a great battery, alternator, big 3 wiring, and have plenty of power for it to push 1200, but will the amlifier itself push out what it says?
Its hifonics by the way

It is a tricky question for sure. Many times, cheap amps are rated at ridiculously high watts but will never get there because they are rated at distortion levels that so sane person would listen to.
Hifonics is a respectable brand so you should get that amount or more assuming that you have a proper wiring kit.
For example, my Fosgate T500-bd is rated at 500watts RMS at 1 ohm but it was tested on a bench at 1633 watts at 1% THD and 1 ohm. 1% is too high for my taste and a test bench is the perfect situation so I probably can get in the 1000 watt range of clean sound if I need it.
hifonics is a good amp im sure it will do 1200@1ohm
