Yes and you were silly to resign!
Sadly it will not help your CV much when you seek another job!
Yup, requests for you holidays have to be approved by your boss. At my work, we have a huge chart of who is not allowed to take holidays with whoever else, so there are not too many people gone, or all the people that can perform a certain task gone at the same time. If there is a conflict, it's either who booked it off first, or who has been there the longest that gets to go, or, in some cases, the more skilled person will stay if they need the help. You ARE entitled to holdiays but they have to be approved. Next time put in your holidays WAY ahead of time, like 3 months, and ask for an approval, and you shouldn't have that problem.
where I am from "holidays" are scheduled in advance with the management, it is a bit contractual. If my "holiday" planning them incurs advanced booking and prepayments the employer is due to pick up the tab for the expense, or let me have the "holiday"
Tell him to give you the T&C(Terms and Conditions)of his company an decide yourself.
I think he can if he needs more of your help but once he gave you a vacation he shouldn't cancel it.
